Semi-finals have been braaied and the Western Cape is sending a star butcher to Sun City for the Shoprite-Checkers Championship Boerewors Challenge.
An independent judging panel has awarded Jasper Gordon of Strand the provincial nomination - and a Weber Q gas grill worth R3 000.
Now he's one of nine provincial finalists who will take part in a braai battle for the title of Boerewors Champion 2005 on September 10.
He uses 70 percent beef and 30 percent pork and a mixture of Deli Spice and Crown National Spice.
"It must be crispy on the outside and moist, just done on the inside. Most of the time when it's brown on the outside it's all dry on the inside. But if you leave it too long it'll lose most of its juiciness and flavour."
Do you ever poke it?
"No! You don't ever poke it. You must try to keep all the juice in - for the flavour."
And what if fat drips into the fire and ignites flames under your braaier? Do you extinguish it with beer or water? "You take the grid off - quickly!
If Gordon's recipe wins, he'll drive away the grand prize of a Toyota Hilux 4.0 V6 Double Cab 4x4 Raider worth R305 000 and a R26 000 Weber Summit stainless steel gas grill.
