TODAY’S dish is so special because it is prepared with meat that came from my uncle’s homestead all the way in Alice in the Eastern Cape.
The dish is inspired by the beauty and simplicity of slow living. Last weekend, I was in the dusty villages of Alice, and seeing kids playing on the street I couldn’t help but think that used to be me at some point. Those kids may look dusty, but chances are they are happy and growing up learning the basics of life and being content with whatever they have.
Rural life is laid-back in an amazing way, but some people don’t understand that. Lately I’ve been seeing people quitting their high profile jobs giving up the city glitz and glamour to go live on a farm. That announcement is often met with raised eyebrows. One would never understand unless they have experienced the joys of farm or rural living. Imagine having to prepare breakfast from freshly laid eggs from your chickens, getting meat from your livestock and vegetables from your garden. It sounds amazing, doesn’t it? I’ve made the pork stew very simple and quick to prepare. Enjoy!

RECIPE: Saucy Pork Stew
Serves: 6
6±700g pork, cut into cubes
15ml (1Tbs) cooking oil
1 onion, chopped
4 potatoes, peeled and cubed
3 – 4 carrots, peeled and cut into chunks
500ml (2cups) boiling water
I chilli beef stock cubed, crumbled
1 leek, chopped
½ green pepper, chopped
1 jar Peppadew Sweet Piquante Pepper & Garlic Pasta Sauce
Method:
In a large saucepan, sear pork and add oil if necessary until brown on the sides.
Add onion and continue cooking until the onion is soft.
Add potatoes and carrots.
Dissolve the stock cube in boiling water and add to the meat.
Mix with a wooden spoon, close lid and let simmer for about 10 minutes or until potatoes are soft.
Add leek, green pepper and pasta sauce. Continue cooking for another five minutes.
Serve with rice.
